What is the Testo Romagnolo?
It's a flat pan with double rim difficult to find outside of Romagna. Its main use is the cooking of piadina, to which it gives a particular fragrance that is not obtained with traditional pans.
The most ancient Testo were made of terracotta, being a material that conducts heat perfectly. Currently the most modern models are made of cast iron or steel, sometimes coated with a non-stick layer.
The handle is always in athermic material to ensure grip, usually in wood or various types of plastic.
It exists in various sizes from a diameter of 24 cm (roughly like a flat plate) to a diameter of 32 cm (as wide as a large pan).
The Testo can be cleaned like any other pot: with a sponge with a drop of dishwashing liquid (any brand is fine) and rinsed under the sink jet, as for dishes.
We recommend not washing it when it is still hot and not putting it in the dishwasher.
If you are outside of Romagna, to buy a Testo you should find a really specialized houseware shop, the advice is to buy it through the internet and have it arrive from Romagna: only in this way you will have a wide choice of models, sizes and different materials.

Why is it called "Crescia"?
It takes the name of crescia because according to legend, a young baker, attracted by the beauty of the sun that was setting over the city of Urbino, decided to knead "something" that had the shape of the burning sun caught in one of the towers of the Doge's Palace and in an attempt to free himself he dropped golden sparks. 
From here was born the "crescia", 
this golden disc characterized by darker spots and streaks and its particular denomination.
